With the above said, all this technology moving at "light-speed".
As an example the technology in the drone I fly now ($4,000) would have cost me over $45,000 five years ago.
The first 1.2 megapixel digital camera I used in the 1990's cost over $5,000
The 4K X3 camera (plus a gimbal) is now under $600
There are many out there saying and promoting the fact that you must GIS stitch your images to be useful. I would counter by injecting the word "MOST" in front of "useful".
Just keep this in mind if you are waiting for this stitch technology to come down in price. I venture - most growers can walk to any point which appears in an image of his/her field. You all know your field like the back of your hand. Are there benefits to the GIS stitch - without a doubt - just as Dronedude aptly points out.
Said another way, the absence of affordable stitching is not going to stop me from shooting and using thermal. I will know where that spot is. Can it (affordably) be put to the GIS shape format in your precision monitor. Very soon it will - if not tomorrow.
