Kansas | This is going to entirely depend on how you have that animal cutup.
If your going all hamburger they discard all the animals tallow and bones and then add tallow shipped in near as I was told. I never worked in that cutting dept, only the slaughterhouse.
It also depends on whether or not you take home your boiling beef, soup bones, and tounge liver heart tail.......
Sometimes, anymore, people don't want the heart liver tail or tongue. The boiling beef gets picked through for hamburger and the soup bones are pitched in the trimmings can
