We've discussed dress % a few months ago. I believe the old rule of thumb (and this is pretty general) a live animal will dress 60% of live wt, and then 60% of hanging wt will actualy be in a box to take home. A lot of bone is removed and if the butcher does a good job of trimming, alot of fat goes on the floor.
