Good for you, Rich. I notice pork is almost too lean, too, as mentioned below. We soak it in NY Spiedie Sauce and grill it quick. Tastes pretty good but not like what you are talking about.

The old Hampshires we raised with .8 to one inch backfat were hard to beat. Your Berks would be every bit as good or better.
