Whiting, Iowa
To everyone who was asking about pork below: I'm part of a group of farmers that raise purebred Berkshire pork for Eden Natural from State Center. We use no antibiotics the last 100 days before slaughter. We feed no animal byproducts. We have a very good market and we are paid a good price. We have set the standard for quality pork. It is more expensive to buy, but you would not be disappointed with the taste. We have to realize that cooking pork the wrong way will ruin any pork. As far as worrying about cooking, I've read that pork is safer than any chicken. 160 degrees is the proper temperature to cook pork. The Berkshire Gold program doesn't exist anymore. I raised half Berks for it until about 1999 when the demand for it tanked along with Japan's economy. I'm not on here to sell my pork but to tell you there are other choices.
