Those contracts are sure messing you up. :) You need some on-farm storage. Don't need 100%, but enough to buffer you through the contracts you are entering.

'Under' your shop makes it sound like you have a basement. Are you saying you want to put the beans on a dirt floor in a pole barn?

It's been done before.

Kinda depends on how many acres, how many contracts, how long you will be waiting on the barge, and so on. 'Round here the dew next morning will wet those beans right down again, so we probably don't have the same issue you do - for me it would be getting the beans harvested while they are dry enough. :)
