The amount of nitrate in the lower stalk depends somewhat on how green the stalk is when you turn them in. If after a frost and the lower stalks are "dead" should be no problem. If they are still very green and you turn the cattle in right away then there might be a chance of nitrate poisoning. Read up on a google search for "nitrate poisoning in cattle".
