I have been told that Johnson Grass contains cyanide and is poisonous when cattle graze it at any growth stage. But I'm sure someone else will have a more correct answer for you.
If Johnson Grass killed cows mine would have been dead years ago.
To answer the original post, I'd think you are safe after the plant starts to grow, it will disperse the nitrates with any new growth. Now if it died and is coming back form roots then I'd have it checked.
