Not sure if you can freeze. If you have room in the refride, put them in there, or a cool garage. When I was in high school I worked at a restaurant, we used the leftover baked taters to make tater salad, it was YUMMY.

You can do most anything with them, Cathie and I sometimes will use them like fried taters, just cut them up and fry them in a pan, sometime we keep the skin on doing this.

I like taters cake, but Cathie hates them.

Do a search, you will find lots a ways to use them.
