Try baking Idaho or Russet potatoes and then let them cool completely. Then grate them using a box grater (big holes) and then fry them in a medium hot skillet. Use a fat your choice, butter, veg oil or whatever. I think butter will brown better. Let them sit till the get brown on the bottom and then turn and don't stir them all the time in the pan.
