The meat taste pretty well get over powered if you spice up your chili very much. Sausage might be a little heavy on the fat content. How about Chile Cincinnati style with spaghetti. http://en.wikipedia.org/wiki/Cincinnati_chili

Personally, I think corn bread is a good choice.
