I believe that white popcorn has way fewer hulls than yellow. But it does not pop up as large. It also pops into a different shape than yellow. There are certain varieties that pop up into a round ball, they use that for like caramel corn. I read an article on the differences in popcorn varieties but it has been a while ago.
