Microwaves ruin a good potato. It's possible to cheat and nuke them for a bit, then the oven for an hour with so-so results. Best is in the oven for close to two hours (big potatoes) no tin foil. Makes the outside skin crunchy, that is the best part.

Spuds are just like any other produce. Fresh is better. We've been eating them right out of the field for most of the summer, first tasty 'new' potatoes, now nice mature russets and reds. The stuff you buy in the stores is almost a disgrace to anyone who knows how good a fresh potato is. For some reason even hashbrowns are much, much better with fresh potatoes. Potatoes keep fairly good in a potato storage cellar for months, but once they take them out of storage, package and ship them I think they loose quality fast.
