| Couple things come off the top of my head.
Use cornstalks for bedding in a building. They don't mat down like straw and are easier to clean out. That's about the number we feed here every year. Figure a bale per week, maybe more in the middle of winter because they will spend more time in the building.
If you don't have experience with a steer stuffer, I'd stay away from it and hand feed. Just know that you will be carrying up to 25# of feed per head during finishing.
I have no idea what the feed value of the screening would be as we give ours away to a guy that feeds chickens with it. I know ours is some cracked kernels, very little germ, and lots of trash and small weed seed. I'd get it tested to see what you have there. You should see around 2.5-3#ADG from start to finish, depending on starting weight. I'd stay away from f/c hay. If a calf isn't feeling well, they will tank up on hay for a couple days to make their belly feel better. When they recover, they'll hit the grain and you will have trouble.
