Silver Lake, Minnesota | Ok I may have fibbed about the pics but I knew it would get you to look :)
The garden is booming right now and all I really ever do is make salsa using the Mrs. Wages packets, and I knew that some of you had to have some awesome home made salsa recipes. I have googled this already and was looking for some good old fashioned NATer salsa recipes.
Anyone care to share their famous salsa recipes?
Here is what I typically do:
1 pack Salsa Mix
Approximately 6 lbs. fresh tomatoes
1/2 cup distilled white vinegar
random veggies to suit (peppers, onion, basil, cucumber, ect)
Wash tomatoes. Scald 3 minutes in boiling water. Dip into cold water. Cut out cores. Remove skins. Chop tomatoes coarsely.
If fresh tomatoes are not available, use home-canned or commercially canned tomatoes. Drain liquid off. You will need 5 pints of tomatoes chopped into coarse pieces.
Measure 5 pints of chopped tomatoes into a 5-quart saucepan. Add Salsa Mix and 1/2 cup vinegar. Bring to a boil, stirring occasionally. Reduce heat and simmer 10 minutes. Stir occasionally. Salsa is ready to serve or to can or freeze.
