I don't claim to be a canner, but I would think the boiling salt,vinegar solution that's added to the jar would kill just about anything that needs worrying about. Isuman's recipe sounds almost exactly like my mom's, cept she adds some dill stalks( not just seed) and a couple chunks of cauliflower. Have had no problems storing them for 18months or more.
