If you are following alfalfa, your wheat will do well. Being as alfalfa is a legume, it has been putting N into your soil and that is one of the main things that wheat will need. We have always had really good wheat crops for a couple years following alfalfa.
If you are just taking your wheat to a local elevator you won't have to worry about protein levels. They will not give you a bonus for higher protein wheat but will dock you for sub 60 test weight wheat.
