the mix, and assuming the alfalfa is not young tender stuff ( tall and rank like the brome is ), all you need to do is turn em on it when the plants are DRY towards late morning or noon, (ie when the dew is OFF, plus an hour or so, sunny day helps).

Cows will tend to fill on the grass first ( alfalfa tastes rank to em so they tend to avoid it when the plants are dry ), thus they start slow and gradual on the alfalfa.
