We keep them in a root celler that stays very cold. I don't know if they would rot if they were not cold enough.
We keep them in 5 gal pales and make layers with the small ends in the middle and the fat ends on the outside. We put sand between each layer. My son uses leaves and seamed to have good luck with them too.
