The best fish I've ever had was cooked by 4 lodge guides on Lake Of The Woods, over a wood fire. They had two HUGE frying pans, and cooked several pounds of bacon in one. When the bacon was done, we sat around eating the bacon while they filleted the walleyes, dipped them in their batter, and cooked them in the bacon grease.
The other pan was filled with oil of some kind and they fried potatoes in it.
I guess this really may not be practical in your instance, but it sure was good.
