Madison Co. Virginia
I'd like to try onions in plastic this year, using drip tape and liquid fertilizer. A friend of mine has had good success at growing massive onions using this method, and it likely requires less weed control effort on my part.

I'm also wanting to try potatoes and sweet potatoes in long rows with 30" spacing, and cultivate them regularly. This is partly to try a different method of raising these(instead of hay or plastic mulch), and partly to play with a family heirloom tractor and cultivator. I'm not sure if sweet potatoes will bush enough to work with the cultivator though, or if I'll just end up cutting off half of the plant because of their runnering tendencies.
