I am curious, how many bushels of corn would it take to finish a critter from say 700lbs to finish? ?

A lot of variables fall into that number. But, as a starting point, you could use 6# of feed per pound of gain. Now, before I get hog tied, there are folks that get below 5# and folks that go over 7# per pound of gain. Feedstuffs available and quality of feeds can make a difference (and toss in weather for a curveball). Lastly, what is the animals finish weight potential, along with feed efficiency (beef vs dairy as an example).
