We are cooking one for dinner tonight. Going to season with salt, pepper, and garlic then throw in the oven at 450-500 degrees for 15 minutes (never done this step before) then going to adjust down to 325 degrees until internal temperature reaches around 120 degrees. After that, we will let rest for 30-45 minutes. If you cook it much past 120 degrees, the whole thing will end up being medium + by the time you slice.
