Thank you I did some reading there and in the comments one supposedly chef from a high end steakhouse recommended Dijon mustard for the marinade mix... that sounds intriguing but I don’t know if I’m that brave... also the hungry mouse method is basically sear first, then long slow cook at 250. Versus lots of the no-Peek methods that I read here of 500 then shut oven off. Yes my wife picked up a wired thermometer |
