They're square, because that's the most efficient compromise between space used, material used, and labor used to enclose those spaces.

Rounding off the corners adds extra material to the fencing, makes wasted space in the corners, and is harder to build.

Switching to hexagonal pens would work, but will take longer to build, and would make for some really messy alleyways and feed lanes.
