I like salmon filets cooked on the grill with a little salt, pepper, and slice of lemon (or lemon, pepper season). Sometimes I'll use blackened seasoning. Cook 'em on about 350° for 7-8 min skin side down then flip for a min or two. I want them cooked just enough to be tender and flaky.
