you don't want large vegetative plants at the time you run out of water and have extreme heat. Later planted will be smaller and not have used up as much soil moisture so may actually live through the heat/dry.

Even our early beans are planted after the guys up north are basically done. Early planted beans only on the very best fields as well so they at least have a chance of drawing moisture through the heat/dry.

We are only shooting for 50 bu dryland beans really. We want 60 and once in awhile will have 80-90bu dryland beans where everything went right. But we have a lot of years of 40 bu when things are tough.
