Katoomba is right on the way towards Dubbo in the Blue Mountains. Make sure to pull off at the "Three Sisters" and take a look at the scenery around there.

Dubbo also has a Taronga Zoo that is more rural geared, I've not been, but was told its pretty neat as well.

Within Sydney, take in the main harbour area, as well as Darling Harbour. I enjoyed taking the ferries a couple times. Once was to go to the zoo and back, the other just to cruise around at get a different perspective on a nice afternoon.

Not sure how long you plan to be over, hope at least two weeks.

Other things I stumbled upon over my trips:
-Cotton cup horse races in Warren
-Mt Kaputar by Narrabri
-Wine country and wineries by Griffith
-Driving the Putty Road north out of Sydney area was pretty fun and scenic.
-Hunter region was pretty nice area
-Kiama blow hole

Through talking with locals I also saw or was part of every day life things that were really interesting to myself, an outsider that is a farmer.
-Sheep shearing process
-Different types of equipment
-Different way of going about harvest (its fast....., oh, and mother bins)
-Crops I'd never heard of
-Experiencing the Australian ingenuity in just how to get things done.

What time of year will you be headed?

There are no better sunsets in the world from those that happen down under
