Sausage made from potatoes and whatever leftover meat scraps you can find after butchering . Throw in some chopped onions and carrots and anything else that needs used up , including the cracllins from making lard . Usually shred the potatoes and mix with everything else and then stuff in casings
Does this recipe come from a certain European heritage? Seems similar to what Czechs call "jaternice" except they used barley instead of potatoes along with every marginally edible scrap of meat left over from butchering. |
