I can see your concern with dead straw making a soggy mat if it rains a lot before the beans are up. Rolling once the beans are up and big enough to tolerate rolling.
I plant beans into standing rye and roll it down between planting and emergence. Since the rye is living when I roll it it doesn't make too tight of a mat for the beans to come up through.
