I think you have as much or more risk putting 18 moisture flowers in the bin in your part of the country as letting them dry a few more points in the field. We've put them through a grain dryer but have had dryer fires. I would check with North Dakota State University they have done a lot af research with grain drying. There advise will always be a little on the conservative side. Just my two cents worth.
