My initial thoughts are: you can freeze potatoes - they don't do well.

However, my freezer book disputes that.  It says:

baked or stuffed potatoes - prepare as usual; top with melted cheese. cool quickly. wrap individually in freezer foil or film. Freeze, then pack in plastic freezer bags.

I am thinking that if you wanted to make mashed potatoes, they would freeze okay also. (but I don't see that option listed in my freezer book).
