If you have the 'S' version of Windows, then you are correct about it allowing only Microsoft apps. But the end to open source software? Nope.
Just install a Linux distro and ditch Microsoft completely. Most things are browser-based anyway and built for Chrome. Even Microsoft Edge is based on the Chromium browser, so if it works in Chrome on Windows, it'll work in Chrome on Linux.
