The pic doesn't show much, but that's a folding 8 row geringhoff cutting sunflowers on a 8010 in Europe. I don't know if this is the same system as you're looking at. As I recall, they have a knife that goes on the top gathering chain pulley that cuts the stems. The stalk rolls still pull the stalk down, so you need to match the header speed to the ground speed so that the sunflower heads make it to the auger.
