You need more ventilation. You could start with chimney's or an open ridge vent, maybe a couple of fans up high on the end walls. You don't say what style of roof you are working with. You could insulate the roof, so the steel isn't so cold to let the moisture condense on, but if you have that much moisture you are going to rot out your barn if you don't deal with it.
