I would bale it, although I do wish we knew where you are. If you have the right genetics for your area it should be fine as far as winter hardiness is concerned and it sounds like a well established field. You are actually better off cutting it now after the freeze than just a few weeks/days before the freeze. Enjoy the cool baling weather ;-)
