Are you doing straight mode or pivot mode?  In straight mode for our JD 7800 pulling a sprayer we turn down the flow rate down to 14 seconds and it smooths things out some but we also only run 5-8 mph.  From what I've seen, the passes are straight as an arrow overall but the thing always has several inches of variance no matter how smooth the field.  I've tried changing the dampening and sensitivity settings but they don't seem to do much at all.  If you're talking about pivot mode, it seems to vary more for us at times for some reason and I've yet to figure out how to get rid of it.  I think its in the way their software handles the steering so you probably always have a few inches of wandering and over steer.
