Like moving a car motor to a tractor, engine cooling can be a problem. They need to be moving through the air. Though a bigger radiator and maybe a larger water pump if it can be fitted can help.

Next problem is speed. The PTO generator is geared to run with the PTO shaft at 540 RPM. The van engine likely will need to run at 1500 to 2400 RPM to produce the horsepower the generator needs. But the water pump won't move enough water to keep it cool in a stationary position if its loaded much. Lots of domesticated vehicle engines overheat at engine idle from not enough water through the cooling system.

You sometimes can take the gear box off the PTO generator, then probably need to turn the basic generator at 1800 or 3600 RPM. Most likely 3600 RPM. You can use a belt drive to convert the engine speed to 3600 RPM. I did all that to a farm grade PTO generator once with an electric motor drive to produce a power isolator for a computer room. The shop kept the gears so when the power isolator was abandoned, it could be restore and hooked back to a tractor.

Its possible to buy the generator/alternator without the PTO drive gears, but its probably cheaper to buy the farm grade device with the gears and remove them. The industrial grade generator/alternator without the PTO gears is a far higher quality product, but also much more costly.
