The autoswath unlock which allowed for autoswath planting with the Tru-Count add on, also does exactly what you ask for when in the harvest mode. Anyplace already harvested will not be counted again. Examples include point rows, or partial swaths, or at the end of the field if you leave the head down a little long. Great feature to obtain cleaner maps with less chance for human error.
