I usually figure a cow will dress out at 60-65% of gross weight. By this I mean a side should weigh about 720 to 780 pounds, since you wont eat the hooves, hide or innards.

Now the tricky part. If you cut it into steaks, roasts and some burger. That will weigh less than the 720 pounds. Since you would lose some fat and some bone. Grind the whole thing into hamburger, it will be even less due to the "processing loss"

I tell my customers a half, processed and packaged as most like it will fit into three 48 quart coolers stuffed full.
