Both sides of the Mason-Dixon Line | This is a tough one. I have lots of ideas on your problems, but limited experience with flow sensors with single flow calibration abilities (Deere, AGCO, and others) I think that the manufacutrers of these yield monitors sometimes utilize clean grain elevator chains that have a gap between a pair of the paddles to assist in calibration and flow readings. I don't know if your machine came from the factory with one of these clean grain elevator chains, but its a possibility that yours did come with one from the factory and it was possibly swapped out for an aftermarket chain? Other than that, if the fieldstar doens't allow for a calibration load that is about half to 2/3rds of your highest grain flow rate, I don't think I'd expect much more accuracy out of it when the grain flow rate strays from what it was originally calibrated for.
