I don't know for sure but I think the man told me that hams are cured with injection these days, back in the day my Father would rub salt cure on the hams and bacon for a period of time,,, several weeks at least ???? And man those things would dry you out worse than,,,,, a drought !!!!!

These day we get one hog a year and my favorite eating is the fresh(uncured) shoulders,,,, and this last one the hams and bacon are not so good at all....
