I would think there are some other factors to consider that you don't mention:

Is the leased land guaranteed in some way for an extended period? Buying high priced cows right now and then the market slipping just a little could hurt if you didn't have access to all the acres you needed in a couple years, but may not matter as much if you are paying cash.

How close are you to being able to buy the number of cows that you need to make up the difference in income?

Would it be better to do it in a couple stages getting more cows now with a part time job then in a couple years more cows and only the cows? Maybe even find a farmer near retirement that may be willing to transition to someone younger that will sell you a part of or his entire operation in the near future.

I know that what you describe is my dream, but I'm younger and don't see it happening for quite some time, especially with all the student loans I'm racking up right now.
Just a couple questions and ideas that i thought of right off hand.
