Sugar Free Low Carb Bread Pudding
6 slices cinnamon raising bread. (Cube the bread and allow it to dry for a couple of hours)
8 large eggs
1 package Sugar Free Vanilla Pudding
2 cups cold skim milk
1/2 cup sugar free Cool Whip Whipped Topping
1 teaspoon Vanilla Extract
2 tablespoons cold butter
1 1/2 teaspoons ground cinnamon.
Preheat oven to 350°, and grease a 9 x 13 nonstick cake pan. Spread the bread cubes evenly on the bottom of the pan. In a large bowl whisk the pudding and the milk together until pudding becomes thick. Whisk the eggs in to the pudding one by one, and whisk in the whipped cream.
Spread the pudding mixture over the top of the bread cubes, and place little slivers of the butter evenly over the top, sprinkle evenly with cinnamon.
Cover the baking pan with foil and bake for 45 minutes. Remove foil and cook for a few more minutes just allowing it to get a little brown on top, not to exceed 10 minutes.
Cut in to slices. You can eat this hot or cold. Store in refrigerator. | |
