Bison meat is awesome! My first experience with it was in Nashville, TN on west end at Ted's Montana Grill. Ted Turners restaraunt is awesome. We had bison burgers and have been hooked ever since. Bought some meat at the local Kroger and it was really good also. I've just bought the meat for burgers but the steaks were awesome as well. Don't have to cook it as much as beef is what I've been told.
