Subject: Turkey brine revisited


I brined our 20lb turkey in a mix of 1 cup Kosher salt, a little Lawlry's Pork and Poultry seasoning and about a cup of unsweetened apple sause for 12 hours before cooking it on Thanksgiving and it turned out great.  Before cooking it I washed it off, patted it down with a paper towel to dry it and rubbed it with EVOO before roasting it in my Charbroil Big Easy oil-less fryer and it turned out awesome.  My 8 year old son who usually has to be forced to eat turkey was eating this stuff like it was candy, I've had deep fried turkey before and I think this was just as good or slightly better without the hassle or expense of frying one.  Cook time was right at 4 hours which is longer than frying but there was only a 20 minute wait for the cooker to warm up.
