These grass fed deals can really suck as far as feed conversion to gain in winter ( matter of fact...tough enough winter area and a contract which prohibits some grain or ddgs and the cattle can almost go backwards rather than gain anything for a time ).
Other than the afore, conversion on feedstuffs you mention will likely be in say the 9 to 1 or 10 to 1 range ie air dry basis, and depends some on the cattle, depends on weather.
Tough ambient cold...and these grass contract deals might convert at 15 to 1....might be 18 to 1 too. Gets tough to figure any profit there even with darn near free feed at times.
On figuring your hard feed cost:
say the cannary grass in agbag perhaps 35% air dry.
baleage bales.........perhaps 50% air dry
Pasture...converts pretty well no matter what, because the cattle harvest it.
Supping the afore feeds on grass works on big cattle because of high appetite requirements and increases your total feed conversion efficieny by approx 40%, doubles the grass carrying capacity at the same time etc.
