South East , Manitoba , Canada | Jim he may be under priced... if you are $1.30 / lb live weight that is about $2.50 to $ 2.60 "hot carcass" . Every animal is different... but the "doubling" effect is close to what I'd expect with the transition from "on the hoof" to "hot carcass". I'd expect the same transition to the final product... Many factors effect that final "in the box" weight... hanging time (moisture loss), trim ,bones ...are just a few things considered. The biggest thing in my mind is the age of the animal... how long was the animal an "expense " and how much of an expense was it. That is the determining factor in my opinion.
