Garlic, rosemary and thyme are good compliments to lamb. We will often use one of the recipes that calls for 'studding' the meat with slices of garlic, link below. A recipe that has those ingredients will be good, we usually bake like you would a rib roast - on a elevated rack or 'roasting pan'. Excellent and leftovers make great gyros.
