Wife has gotten to where she prefers cooking pork shoulder over pork loin. Loin is so often almost fat free. The shoulder is a richer cut and more flavorful.

She is not a big fan of cured ham to begin with. She will eat it, but fresh pork is her preference.

Actually beef is her preference but pork comes in second. Not counting lobster or scallops. :-)
